Four Course Dinner Paired to Perfection

 Begin the holiday season with a beautifully prepared and delicious four course meal paired with fine adult beverages from J Vineyards & Winery at Sterling’s Seafood Steakhouse. Chef de Cuisine Neil Campbell, recognized in the groundbreaking publication, Best Chefs America, based on his exceptional reputation among his peers, will raise the bar once more on Friday, December 20th beginning at 6 p.m. 

The reception begins with a “gift from the chef” of Kumamoto oysters and mignonette gelee along with J Brut Rose. The following fish course consists of seared Ahi tuna topped with Foie Gras and shiitake mushrooms served on a crisp rice cake paired with J Cuvee 20 Brut. The salad course is a mélange of fresh winter greens, pepper-seared breast of squab with dried cherries and cranberries,  spiced pecans and champagne vinaigrette accompanied by a 2012 J Chardonnay from the Russian River Valley. An intermezzo of blood orange sorbet precedes the entrée perfectly paired with 2012 J Pinot Noir from the Russian River. Savor applewood smoked bacon wrapped roast loin of New Zealand Elk with crispy pancetta and herbed cabernet syrup. The side consists of butternut squash and Yukon gold puree, citrus roasted baby beets and fresh brussel sprouts. The final dessert course is brown sugar orange with chocolate branch filled with orange Bavarian mousse served with dark chocolate and Grand Marnier pave.
